Chicken Noodles with Seaweed and Vegetables

INGREDIENTS

Noodles q.s. ​

Chicken q.s.​

10g dried Seaweed / (equivalent to 50g soaked)​​

1 courgette​

1 carrot​

1 small cucumber​

1 onion

20g coriander​

10g Mint

10g basil​

4 tbsp toasted sesame seeds

1 lime (or lemon) juice ​

4 tbsp sesame oil (or olive oil)​

2 tbsp ginger finely grated​

1 tsp honey ​

salt and pepper to taste​

INSTRUCTIONS

Soak dried Seaweed in cold water for 10-15 minutes, allowing it to expand. Drain the water by running the Seaweed under running water.

Boil the chicken and then shred it. Prepare the vegetables: cut the courgette into strips and the onion into very thin slices.

 

Cut the carrot and cucumber into thin strips (julienne). Chop the coriander, mint and basil. Put water to boil and add the noodles and seaweed for 15-20 minutes. Drain and put in a large salad bowl with the chicken, vegetables and herbs.

Put the sesame oil, lime juice, zested ginger, honey, salt and pepper in a small bottle and shake well. Add to the previous mixture and mix well.
