Wakame Seaweed Pesto Pasta

INGREDIENTS:

  • Wakame to taste. The more you use, the stronger the seaweed flavor of your pesto will be.
  • 100g pesto pasta
  • 50g cashews (or another dried fruit of your choice)
  • 50g grated parmesan
  • Drops of lemon (to taste)
  • 1 burrata
  • Lemon zest
  • Olive oil

  • Easy

  • 2 People

  • 20 minutes

  1. Place the wakame in boiling water and cook for 5-10 minutes. Once cooked, remove the seaweed from the pot and place in the blender jug.
  2. Keep the water in the pot as well.
  3. Use the water from cooking the seaweed to cook the pasta for 5-7 minutes.
  4. In addition to the Wakame, add the cashews (or other dried fruit), grated Parmesan and a few drops of lemon juice to the blender jug. Using the hand blender, blend all the ingredients as you add olive oil until you get the desired texture.
  5. Mix the pesto with the pasta and mix everything together.
  6. Finish by placing the burrata and lemon zest on top.
